didn't snap too many shoots actually when ma mum and sis was here, but here's a few :) I think we were too busy with catching up with eachother and just enjoying some time together. It was great weather that weekend too , seriously it was 30 degrees or more everyday (!) lucky us, ey?

Like tomorrow, can't wait for a lay-in! Start school with ballet at 11:50 so I can get up much later than usual. I need it. I need holidays too, seeing all ma friends getting holiday now kills me hahha! I want it too, I want to see ma family and friends and go to the sea. Aaaagh! But only 19 days to go.

sorry for bad update guys! so much going on.. last week my mum and sister came and visited me + I had my birthday (wiii) haha , and this week I finish 19.30 everyday because we are having a contact-impro workshop on top of normal schedule. Busy bee! 
 
This weekend I will make a post about ma b-day and the visit, promise!
 
I put these cookies together quickly the other evening anyway, to have as small snacks at school (well needed when I don't eat dinner until 20.30!). It's the same recipe as the last ones - just added some raw cacao, 1 tsp coconut oil (took away the dates!). Yummy!

So this is my first recipe of healthy oatmeal cookies and I'm so excited to share it with you! It's a perfect snack you can take on the go, pack down in your lunchbox or eat when you fancy something sweet but still want to be healthy. It gives you good energy and keeps you full until the next meal! 
 
 
OATMEAL COOKIES by me
 

You need
 
5 dl (200 g) oats
1 egg
1 more or less ripe banana
3 chopped dried dates
1/2 dl hot boiled water
1 tsp ground cinnamon
1/2 tsp ground cardemum
1/2 tsp ground ginger
10 g (a handful) sliced almonds
 

How
 
Preheat oven to 175 degrees celcius.
 
Start by mixing the oats with the cinnamon, cardemum and ginger. In a seperate bowl - whisk the egg nice and fluffy and add the mashed banana. Add the eggmix to the oatmix and give it a nice stir so that all the oats are covered. Poor in the hot boiled water and last the chopped dates - stir again!
 
On a pan of baking sheet, divide the mixture into 12 (optional) and use a fork to press them down and make them level. Make the edges round - they should look just like a slighty thicker cookie. Sprinkle the sliced almonds on top as a finish. 
 
Bake for about 15 min (almonds should have some colour), in the top part of the oven. Leave to cool down and store in an airtight container, up to 5 days or store in fridge to keep them longer.
